A Wee Bit o' St. Patrick's Fun



Oh what a joy it is to celebrate any occasion! Tonight for dinner we had "Green Supper" I decked out the table in green decor and prepared green food. I love doing things that my kids will remember fondly when they are older.
Our menu consisted of:
Leprechaun Chowder (Broccoli Soup)
Spinach dip and French bread
Lime Jello

Leprechaun Chowder Recipe
1 cup chopped ham
1/2 cup chopped onion
1 large carrot grated
2 cups chicken soup stock
2 cups pureed broccoli
1cup frozen corn
1 1/2 cups Half and half cream
1/2 cup instant mashed potatoes

Fry ham and onions in the bottom of soup pot until onion is soft. Add grated carrot and fry for another 3-5 minutes. Add soup stock and simmer for 10 minutes. Add broccoli, corn and half and half. Heat but do not boil. Add instant mashed potatoes if the soup need thickening. Salt and pepper to taste.
